From 2d to 4th of March the 4th Russian Coffee&Tea Industry Event (RUCTIE) took place in ECC Sokolnoki.

RUCTIE – это ежегодное масштабное мероприятие, которое по праву можно назвать крупнейшим индустриальным событием в области чая и кофе. RUCTIE объединяет в себе конференцию, выставку и профессиональные соревнования. Ежегодно на площадке собираются представители чайно-кофейного рынка, те, кто знаком с культурой кофе и чая. Более 4000 специалистов в сфере кофе и чая, технологов, производителей, дистрибьюторов, владельцев кофеен и чайных клубов, магазинов, а также бариста и чайных мастеров приняли участие в работе Russian Coffee&Tea Industry Event 2017. Более 80 компаний из России, Германии, Италии, Кении, Кореи, Гонконга, Китая, Японии и других стран представляли свою продукцию и услуги в рамках выставки RUCTIE. Среди экспонентов были производители готового кофе и чая, поставщики кофейного и чайного сырья, производители оборудования и упаковки, различных ингредиентов и дополнительных аксессуаров для отраслей.

В рамках выставки на разных площадках были организованы 7 кофейных чемпионатов, чайный чемпионат Tea Masters Cup Russia, семинары, образовательные программы, мастер-классы, дегустации, круглые столы, а также ставшие уже традиционными 7-й Московский Международный Кофейный Форум и 6-й Московский Международный Чайный Симпозиум, которые проводились в новом формате.

Была подготовлена конференционная программа, рассчитанная на 3 дня. В конференц-зале первый день был насыщен докладами о рынке чая. Здесь можно было услышать о перспективах и трендах мирового и российского чайного рынка, узнать о последних маркетинговых исследованиях в сегменте чая. Большой упор был сделан на стандартизации чая в XXI веке. Второй день был полностью посвящен российскому и мировому кофейному рынку. Выступали в этот день представители разных компаний-производителей, рассказавших о своем видении рынка кофе, как спешиалти сегмента, так и сегмента растворимого кофе. Были приглашены специалисты из крупнейших аналитических компаний, таких как Nieslen, Euromonitor Intеrnational, NPD Group. Их презентации, содержащие исследования рынков чая и кофе, собрали огромное количество слушателей, программа заинтересовала генеральных директоров компаний, занимающихся кофе и чаем. Традиционно первые два дня конференции завершались круглыми столами о том, куда движутся рынки чая и кофе, каких перемен ожидать в будущем и какие возможности появляются у компаний-производителей чая и кофе в России. В последний день можно было послушать советы от ведущих маркетологов страны. Сессии содержали в себе такие актуальные темы, как продажа чая и кофе в кризис, правильное составление меню кофейни, цветовые решения в упаковке чая и кофе, продвижение чая и кофе в социальных сетях, в общем, все, что помогает стимулировать продажи кофе и чая.

В зоне бизнес-практик «Бизнес Кейс» проходило много интересных и актуальных дискуссий, докладов и презентаций. Дискуссия «Франшиза или собственный бренд – что выбрать» собрала на площадке владельцев и основателей крупнейших кофейных брендов. Были раскрыты и другие темы о возможностях для чая и кофе на других рынках. Дискуссия о том, почему в России нет чайных, поднимала вопросы, которые волнуют многих владельцев чайного бизнеса, живой интерес у гостей конференции вызвали доклады о рынках иван-чая и краснодарского чая. Одна из новых тем, затронутых в рамках конференционной программы, была посвящена мобильным кофейням, которые сейчас активно развиваются в России.

Посетители конференционной программы смогли не только расширить свои познания, прослушав доклады приглашенных спикеров, но и насладиться отличным бодрящим кофе Jardin и ароматным чаем Greenfield от компании «Орими Трэйд» во время кофе-брейков, организованных партнерами и спонсорами конференции.

На всех образовательных площадках RUCTIE выступило более 100 спикеров не только из России, но также из Беларуси, Сальвадора, Кореи, Великобритании, Германии, Франции, Тайване и других. Было проведено более 25 дегустаций, более 30 семинаров и лекций, а также 22 сессии-дискуссии, посвященные актуальным проблемам и перспективам чайного и кофейного рынков.

В зоне «Семинарская» проходили лекции о чае и кофе. Огромный спектр тем, от покупки зеленого зерна и истории чайной Москвы до советов, как правильно выступать на чемпионатах были раскрыты в дни выставки. Любой, кто посетил эту зону, раскрыл для себя все секреты чайных и кофейных напитков.

В зоне «Лаборатория Кофе и Чая» было проведено более 12 каппингов чая и кофе, которые мог посетить любой желающий. Горячие и вкусные чай и кофе не только расширили вкусовые впечатления участников, но и придали бодрости и хорошего настроения. 2 и 3 марта прошли два вида особенных каппингов: дегустации Иван-чаев и «Чайные эксперименты», которые включали в себя дегустацию травяных чаев, не содержащих чай и кипрей. Образцы предоставляли более 10 компаний со всей России.

Дегустации с национальным колоритом провели занимающиеся чаем представители корейских старейших буддистских монастырей. Они рассказали о своей национальной чайной церемонии или «дэйре». Гости из Кении устроили дегустации кенийских чаев, на которых рассказывали об особенностях чаепития в своей стране. Настоящий национальный сальвадорский кофе привезли для российских гурманов представители Сальвадора. Они не только угостили гостей бодрящим напитком, но и рассказали о его особенностях.

Зона «Практикум» стала наиболее привлекательной интерактивной площадкой. В этой зоне были не просто лекции – каждый рассказчик проводил дегустацию, чтобы наиболее полно раскрыть тематику выступления. Темы варьировались, от воды и принципах ее выбора для приготовления чая и кофе, до популярного метода - холодного заваривания кофе. Каждая тема вызывала большой интерес у слушателей, задававших спикерам вопрос за вопросом. Компания Newby London проводила семинар о том, как правильно выбирать чайного поставщика в ресторанном бизнесе, об особенностях выбора чая и составления чайной карты. Состоялась и профессиональная чайная дегустация. Компания Mikale затронула тему об инновациях в кофемолках и фильтровых кофемашинах, а также провела каппинги кофе, молотого на кофемолках Markibar и приготовленного на инновационном фильтровом оборудовании Hipster. Посетившие семинар гости остались довольны.

Отдельное внимание стоит уделить «Фабрике обжарки». Основной темой выставки в этом году стала тема национальной обжарки кофе, поэтому «Фабрика обжарки» пользовалась невероятной популярностью. У этой площадки была собственная сцена, с которой для обжарщиков выступали опытные специалисты с докладами, посвященными обжарке кофе. Семинары на «Фабрике Обжарки» представили весь спектр тем, начиная от сбора и обработки кофейных зерен, заканчивая правильным приготовлением напитка в кофемашинах нового поколения. Начинающие обжарщики узнали для себя много нового, что поможет им в дальнейшем, а те, кто уже не первый год знает, как обжаривать кофе, смогли отточить свои знания о производстве и контроле качества кофе.

В течение трех дней любой посетитель выставки мог пожарить кофе на обжарочной машине от партнера мероприятия компании «Тайфун Инновация», а компания «Арис-Пак» предоставила упаковку для обжаренного кофе. Партнером по кофе выступила компания Greenсof.

В этой же зоне состоялся конкурсный отбор на Национальную премию «Обжарщик года», в которой приняли участие 20 лучших обжарщиков со всей России. Участники соревнований лично раскрыли все свои кофейные секреты перед зрителями: они не только рассказали, какой кофе представляют судьям для оценки, но и заварили его для всех желающих.

Впервые была организована специальная зона «Эспрессо Бар», где любой посетитель выставки смог не только попробовать эспрессо от участников чемпионата, но и обучиться мастерству приготовления кофе.

В рамках выставки состоялся 4-й национальный финал Tea Masters Cup Russia, который собрал профессионалов в приготовлении чая со всей страны. Впервые чемпионат проходил по новым правилам и включил в себя уже не 3 категории, а четыре: «Мастерство приготовления чая», «Мастерство чайной композиции», «Мастерство дегустации чая», «Мастерство чайной миксологии». Победители чемпионата отправятся на мировой финал в одну из старейших чайных стран мира.

На площадке RUCTIE прошли профессиональные кофейные чемпионаты Russian Barista Days по различным направлениям: Российский отборочный тур World Barista Championship 2017 (Чемпионат Бариста), Российский отборочный тур World Brewers Cup Championship 2017 (Бруерс Кап), Российский отборочный тур World Cup Tasters Championship 2017 (Кап Тестинг) и Московский отборочный Чемпионат Латте Арт, впервые был проведен чемпионат «Кофейная миксология», где участникам нужно было из разных ингредиентов создать напиток на основе кофе. Российский чемпионат по оценке аромата кофе заключался в определении места произрастания кофе по запаху сухого молотого кофе.

Традиционно после завершения второго дня работы выставки состоялось официальное награждение лауреатов почетного звания «Человек года» в индустрии кофе и чая по версии журнала «Кофе и Чай в России». «Человеком года» в области кофе стала Татьяна Елизарова, консультант по качеству компании «СФТ Трейдинг» - за многолетний вклад в развитие кофейного рынка России и популяризацию кофе, по случаю 20-летия работы в кофейной индустрии. Звание «Человек года» в области чая было присвоено Радхакришнану Баскарану - за многолетний вклад в развитие чайного рынка Российской Федерации и по случаю 60-летия. Награждение проходило на торжественном вечере, который был посвящен празднованию 25-летия с момента начала развития направления Спешиалти кофе в России. Ужин был организован при поддержке компании «Монтана Кофе», чье имя неразрывно связано с понятием спешиалти в нашей стране и которая в эти же дни отметила свое 25-летие. Прекрасную торжественную атмосферу праздничного общения гармонично дополняли живая музыка и шведский стол.
